| Ingredients |
two 1"-1 1/4" thick veal chops 3-4 T. olive oil 3-4 T. fresh sage, chopped 1 T. fresh rosemary, chopped 2 cloves garlic, chopped Sea salt and freshly ground pepper |

| Directions |
Combine the olive oil, sage, rosemary and garlic in a small bowl. Season to taste with salt and pepper. Allow the oil to sit, covered at room temperature, for a least an hour to allow the flavors to combine. This can be made the day before as well. Refrigerate initially, but bring to room temperature before using.
Heat the grill to high.
Spread the herb mixture on both side of the chops before grilling. Retain a tablespoon or so to glaze the meat after it is done. Grill the chops for 4 minutes on one side with the grill covered. Turn, recover and grill another 5 minutes for a medium rare to medium finish.
Serve immediately with a drizzle of the reserved herbed marinade over the top. |
