| Ingredients |
1 boneless, skinless chicken breast but into 4 pieces (or 4 thighs) 1 t. paprika 1 t. coriander 1 t. cumin 1 t. cinnamon 1/8 t. cayenne 1/8 t. sea salt 1 T. olive oil 1/2 c. yellow onion, diced 1 T. fresh ginger, minced 1/4 t. red pepper flakes 1/2 t. cinnamon 1/4 c. dry white wine 1 1/2 c. fresh tomatoes, seeded and chopped 1/2 c. organic chicken broth 1/2 c. canned garbanzo beans, rinsed 1/2 c. black olives, cut in half 1 T. honey 1/2 lemon, cut into wedges 1 bay leaf 2-3 c. cooked egg noodles Chopped flat leaf parsley, for garnish |

In a small bowl, combine the spice mix of paprika, coriander, cumin, cinnamon, cayenne and salt. Roll the chicken pieces in the spice to coat. Refrigerate for several minutes while you prepare the sauce.
In a large skillet, heat the olive oil on medium high. Add the onions and cook for 3-4 minutes until softened. Add the garlic and ginger. Cook several minutes then add the red pepper flakes and cinnamon. Cook another minute, then deglaze with the white wine. Simmer until the liquid is nearly gone then mix in the tomatoes, broth, garbanzos, olives, honey, lemon wedges and bay leaf.
Reduce heat to medium low. Arrange the chicken pieces on the sauce, cover and simmer for 15 minutes. Remove the cover and up the heat to medium and continue cooking to reduce the sauce. Test the chicken for doneness . If cooked though, remove to a warm dish and cover loosely with foil.
Cook noodles according to package directions. If you use fresh noodles, they will cook in 3-5 minutes. Regular noodles will take 10 to 15 minutes. When noodles are tender, drain and toss with a little butter to keep them from sticking.
Meanwhile, continue to cook the sauce until most of the tomato liquid and broth have evaporated and it has thicken. Taste the sauce. Depending on the tomatoes you may want to add a little more sugar or salt.
Arrange a serving of noodles on heated plates, add two pieces of chicken and top with sauce. Serve immediately garnished with a sprinkling of chopped parsley. |
