6-8 oz. fresh Crimini or other flavorful mushrooms 1/2 package (1 crust ) frozen pie crust (see Comments ) 3/4 c. freshly grated parmesan cheese 2 T. butter 2 T. olive oil 1 t. dried thyme 3/4 c. yellow onion, thinly sliced 1/4 c. dry sherry 1/4 c. organic chicken stock 3 T. sour cream 2 T. heavy cream Sea salt and freshly ground pepper, to taste |

| Directions |
Defrost the pie crust for about 15 minutes or until soft, but still cold. Clean the mushrooms, remove tough stems, and coarsely dice. Set aside.
Heat oven to 400 degrees F. On a piece of wax paper or wrapping for the crust, roll the crust out until quite thin. Line a 8-9 inch pie tart pan with the crust, pressing it to sides side and crimping the edges. Prick all over with a fork. Bake for 5-8 minutes until lightly browned and firm. Remove from oven and reduce oven temperature to 350.
While the crust is baking, in a large skillet, heat the oil and butter. Add the onions and cook on medium high for 3-5 minutes until soft and golden. Add the mushrooms and thyme along with salt and pepper. Cook until the mushrooms are tender and beginning to brown. Pour in the sherry and chicken broth and cook until most of the liquid is evaporated. Mix in the sour cream and heavy cream. Cook several more minutes to thicken.
Sprinkle half the parmesan cheese on the pie crust, then layer the mushroom mixture. Finish with top layer of parmesan. Bake for 35-40 minutes until the crust is brown and crispy and the filling is bubbling hot. Remove from the oven and let stand for 5 minutes before cutting. Serve immediately. |

You want to use frozen pie crust that is not formed into an aluminum pan. Trader Joe's makes a good buttery crust that comes folded in two sheets. Use one sheet for this tart and the other for a easy fruit pie like the Quick Apple Wrap (see recipe below for Quick Apple Wrap)
This tart is best served warm soon after removing from the oven. Total cooling or reheating will cause the cheese to solidify and harden. It can be served as an appetizer or side dish. Add a salad and it makes a good vegetarian main dish. |
