1 whole pork tenderloin ( approx. 1-1 & 1/2 lb.)
Marinade 3-4 T. orange juice 2 T. light soy sauce 1 T. fresh ginger, minced 2 T. pomegranate concentrate or syrup 2 T. Dijon mustard 1 T. grated orange zest 1 medium clove garlic, minced
Pomegranate Sauce 1/4 c. orange juice 1 T. honey 3 T. pomegranate concentrate or syrup 2 T. light soy sauce 2 T. basting mixture 4 T. heavy cream 1 T. butter Freshly ground pepper Sea salt, to taste |

| Directions |
Combine all the ingredients for the marinade. Blend well and reserve 2 tablespoons for the sauce. Pour the marinade into a narrow non-reactive covered dish or heavy zip lock bag. Add the tenderloin making sure it is well coated. Refrigerate for 3-4 hours, turning occasionally.
About an hour before grilling, remove the tenderloin from the refrigerator and bring to room temperature.
About 30 minutes before grilling, combine the orange juice, honey, pomegranate syrup, soy sauce and the 2 T. of basting mixture in a small sauce pan. Heat on medium high to near boiling. Reduce the liquids by half. Reduce the heat to medium and mix in the cream. Bring to near boil and cook for 1-2 minutes. Remove from heat and swirl in the butter. Season with pepper and a little more salt if you like.
Heat the grill to high. Remove the pork from the marinade. Grill, covered for 5-8 minutes depending on the thickness of the loin. Turn and grill another 5-8 minutes for medium to medium rare. Do not overcook. The tenderloin should be pink in the middle and crispy on the outside.
Carve into slices and arrange on heated plates. Serve immediately topped with the sauce. |
